How much of that noise is fake?

All these cables mention Bose systems in the cars. We don’t have those.. does this still work?
When I asked they said it's it is based on the RPO code. They also confirmed GMBB4 is the right part number for the UQS sound system.

Do we have any sense of how bypassing ANC will affect the artificial engine noise from the speakers? In some of the exhaust modes it seems possible it's real noise picked up by microphones and amplified, but track mode has that fake interstellar warble noise.

As I understand it ANC is noise canceling some engine frequencies but letting some through. And it's also canceling other noise. I do not believe it adds any engine sound.

ANC and ESE are 2 separate things, but how Cadillac implemented them, they are tied together. If you install the ANC bypass you will also have ESE deactivated.
 
There's a lot of fake noise nowadays with modern new vehicles. Maybe you can look into improving the intake and exhaust mechanisms of the vehicle to give more of an authentic noise if possible.
