I understand that adjusting it can change the amount of power you get from the engine but does it change anything related to gear engagement in a manual?

There is no "engine/shift" adjustment that I'm aware of. The "engine" setting for the modifiable modes just affects the throttle. It does not change the amount of power.

When you push the V mode button there is an "engine/shift" option that you can adjust.

If I had to venture a guess I'd say it has something to do with the responsiveness of the rev matches or how responsive the engine is between shifts. But that's just my guess.
