How do you disable the stability and traction control completely? I held down the button until I saw both traction light and stability light turn on. I gave her the old scandi flick and goosed it and still had nannies kick in

Same happened to me last weekend at the track. We were doing skid pad exercise and I couldn’t turn it completely off. Tried long press as well.

It's possible you had PTM engaged at a level other than Race 2, which could still be restraining things.
Check the 'Competitive Driving Mode' section in the manual to make sure it's all off.
