I've tried to get info here and on another forum. Perhaps not as specific as I should have been, who knows?

There must be some way to stop the car from doing things that I have not initiated. The biggest thing I've seen is it deciding I'm too close to another car (I'm not and I'm not an aggressive driver) and braking.

You can 100% disable the automatic front braking.

I’ve never noticed it being over aggressive other than driving in NYC and getting cut off.

On the infotainment screen, you go to Settings, then click on Vehicle, and then go to Collision/Detection Systems. There’s a whole list of different ways the car can warn you and/or automatically intervene in different situations. If you click on each setting, I think it also gives you a description of what it does.

If I remember correctly, you can choose to have them set either to automatically brake or do some other evasive maneuver, or alternatively just warn you using sounds or seat vibration without any automatic intervention. I have my settings all to seat vibration only. I think it’s a nice balance between letting you know but not being too distracting, and I find the beeps annoying.

I agree with you, I generally don’t like the semi-autonomous driving features like automatic braking. I’ve never used super cruise, but I imagine something relatively autonomous like that would be better. I don’t like the car suddenly doing things I’m not ready for when I’m the one driving.
