You can fix both of these. There is a "minimal" screen for the dash.
And delete your phone and re-pair it, it will ask if you wish to not have carplay come on everytime.

I'm not certain there are any vendors that make an exhaust. If you really want a great company, I would try Solo Perfmance or Atak. Solo has a lot of exhaust options for other cars, and they do custom stuff. Only downside is they're located in Canada.
Unfortunately nobody is going to spend thousands, if not ten's of thousands of dollars doing research for a vehicle that has less then 25k cars built whose parts aren't interchangable. If you want that, you should have bought a Camaro or Mustang. Sorry, not trying to be a jerk by anymeans...

Not sure you want "gunshot" like sounds coming from a turbo car. That means unburned fuel in the turbo, which is really bad for the turbos and bearings. My fun, weekend turbo car did this when the HPFP was failing and leaking excess fuel into the engine. Not sure though about the Cadillac.
My vented/heated kick in automatically. I can tell you the other day I had my climate set to 69 and it was cold out, so I bumped it to 72 and it kicked on my heated seats and wheel.
